Full Cupping Notes
This Caturra lot from El Mirador shows a pleasantly sweet note of malted chocolate in the grinds at City+ and Full City, accented by walnut, and molasses. The wet aroma is marked by toffee and caramel notes, along with a creamy cashew butter hint. The cup offers crowd-pleasing bittersweet tones in the middle roasts, caramel-accented chocolates, with a powdery cocoa flavor in the finish. The cup acidity is pretty tame, but has a slight tangy side that leans into the tangy bittering of dark chocolate. I've really enjoyed the rich bittersweetness and body that comes with immersion brews, particularly the Clever Dripper where contact with the grounds is limited to the steep time, and much of the suspended solids are kept from the final brew. My ratio is a little on the heavy-dose side, 24g of coffee to 12 oz of water.

Origin & Farm Notes
This coffee comes from a farmer named, Reinel Cerón, in the village of El Mirador, Pitalito Municipality. He's part of the El Bombo coffee cooperative in Pitalito, who have been serving farmers in the region for almost a decade. His 1750 meter farm is planted with 6 hectares of coffee varieties, like Gesha, Chiroso, Colombia, and Caturra. We bought both this Caturra lot, as well as a small selection of Pink Bourbon that has already sold out. Reinel ferments his whole cherries overnight before pulping, then ferments the pulped seeds in tanks for 24 hours.
