Full Cupping Notes

This has made such a delicious brewed coffee, what we've come to know as classic fruited small-producer Colombia profile, cleanly accented with sugary-sweet notes as its base flavor. The ground coffee has a very sweet scent, like panela raw sugar, and a light molasses hint. There is also a raisin dried fruit scent, with hint of sweet spice mix. The wet grounds had a similar scent, sweetness of unprocessed sugars and raisin danish, with cinnamon and sweet butter notes. City/City+ roasts brew a cup balanced by fruited highlights, malic acidity, and dark sugar sweetness. Raisin and red grape characterizes the more fruit-forward flavors, strenghening as the cup cools. Paired with cooked raw sugars ("panela" in this Colombia) this recalls baked goods, raisin cookie or pastry, with cinnamon sugar. The finish has pleasant bittering hint of grape skins, with lingering molasses.

Origin & Farm Notes

This coffee comes from a small producer named José Miguel Paz Cantuca, in El Retiro village, which is part of the Buesaco Municipality of Nariño. Buesaco has become an integral part of our Colombian buying program, and a lot of the coffee comes from farmers who delivery their coffee to Alianza, a coffee association located in the heart of Buesaco. Jose's 2 hectare coffee farm is called Finca Betania, and is planted in Caturra and Colombia varieties. The Colombian Andes cut right through Nariño, and you see a lot of very high altitude coffee farms, including Jose's. Finca Betania sits at 2010 meters above sea level, where warm days and cool nights present optimal conditions for both growing coffee, and drying coffee. That said, like much of Colombia, it does see a lot of rain and coffee drying happens inside the safety of makeshift drying rooms that are built from wood frames (often bamboo) and plastic tarpaulin, with vents on either side for airflow. This allows the warm sun to do its work, while keeping the coffee safe from the passing rains.
