Very pleasant in the light-to-medium roasts, low intensity, moderately sweet brew, with a touch of citrus acidity, burnt sugar, creamy Macadamia nut, toasty Genmaicha tea, and cocoa. City to Full City.
Full Cupping Notes
Smells of caramel and vanilla come together in the dry fragrance, along with hints of dried fruit, and walnut. The wet aroma shows potent sugar browning smells at City/City+ that have the complexity of sugar caramelizing in a pan. At City roast level, a bright hint of citrus cuts through raw sugar sweetness, and a creamy note of Macadamia nut lingers in the aroma. As you move through the coffee, the sweetness opens up to something more pungent. like burnt sugar, along with accents of Genmaicha tea (green tea with toasted brown rice) and cocoa. This Typica selection is lower intensity all around, yet subtle accent notes add dimension to the cup as it cools. Taking the roast to Full City extracts a more roast-toned cup, deep chocolate flavors accented by notes of cinnamon and almond in the finish.

This coffee is from the Bambito Estate, located near Volcan Baru in Chiquiri Province. Chiriqui is situated in the lush mountain highlands of Panama, along the Caldera river (aptly named "Caldera", a type of volcano, and runs through Volcan Baru National Park). The elevation at Bambito Estate runs the range of 1600 to 1800 meters above sea level, and the coffee plants benefit from the nutrient rich volcanic soil in the region. Bambito is planted mostly in Caturra and Catuai, and there are some patches of Typica coffee, this lot being a full separation of this variety. Bambito employs a mechanical demucilager for wet processing and it's possible that some of the fruit made it through that step as well as the soaking/agitation step that follows.
