Full Cupping Notes

From light to dark, this coffee from Rosalio Villatoro pushes sweetness and body in equal measure, constructing a balanced coffee at a wide range of roast levels. Its versatility is apparent when tasting the two roasts we prepared, our City roast hitting 414F (14 degrees post 1st C), and our darkest Full City roast dropped at roughly 430F (30 degrees post 1st Crack). The fragrance and aroma of the City roast gave off smells of toasted sugar and caramel glaze, and the wet aroma brought out a hint of dried fruit, and a note of butterscotch. The hot cup is sprinkled with flavors of raw sugar and creamy caramel, with a fruited acidic impression that comes off like red apple. Full City roasts show a very slight fruited note, but the base flavors are a balance of molasses-like sweetness, and low-toned cocoa flavors, like bittersweet chips, and flourless torte. This coffee will do fine at Full City+ too, though I did not roast that dark myself. Body and bittersweetness also make it a stellar candidate for single origin espresso.

Origin & Farm Notes

This coffee is from Rosalio Villatoro, one part of the Villatoro family whose coffees we've bought and blended as "Familia Villatoro" in the past, as well as offered on its own when there is enough. We thought this particular lot deserved being showcased outside of a blend, and is thankfully a sizable bag count! The Villatoro family lives in the Peña Blanca part of La Libertad, and their farms are situated around 1700 meters above sea level. They have mostly Bourbon and Caturra planted on their farms, with a sprinkling of Typica trees scattered throughout. This coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a sophisticated dry mill where they handle the finishing touches for exportation of the green beans.
