Haimi has a unique spiced dimension, and otherwise fits right in with the rest of our Yemeni coffees; deep-toned, earthy, and appropriately rustic. The grinds show earthy-sweet notes of palm sugar, savory hints of unsweetened cocoa and roasted peanut. Baking spices imbue the wet aroma, along with malted chocolate and leafy Yerba Mate. City+/Full City is a good roast range to start with, where deep-toned flavors are pungent, and complex spice notes bring out interesting profiles of baked goods. Heady spices like fenugreek and Allspice add complex layers to the aroma and drawing out hints of saffron cookie, fennel sweet bread, sesame and pistachio. Rustic notes of rice syrup, leather, and tobacco are underpinned by syrupy dark cocoa that lends to some bittering aspects in the finish. Darker roasts that hit 2nd Crack have their own appeal, rooty and tangy with roast, with waxy body that stands up to steamed milk. It's made a great espresso shot, even as a lighter, City+ roast. I was floored by the thick, creamy texture, and intense bittersweet flavors of high % cacao content chocolate, toasted nibs, sesame oil, and a subtle note of freeze dried fruit.

Origin & Farm Notes

Haimi is a distinct regional coffee, but has often been sold as Sana'ani since it is geographically contiguous with the area around the capital, Sana'a. Many moons ago, I found a Yemeni exporter willing to separate the Haimi (he refers to it as Haima: Haimi simply means "of Haima"). I found it's unique cup character appealing, and it seemed to have a dark sweetness that was distinct from our other Yemeni offerings. Now we are working with another Yemeni exporter, who is separating coffee regionally from Haima Dakhliya, and Kharijea Districts in Sana'a governorate. This lot is made up of coffees from about 100 different farmers, most with less than 1000 trees planted. There's a great range in altitude, and coffee grows is areas as low as 1000 meters above sea level, all the way up to 2000 meters. Read our interview with Fatoum Mouslot from 2020.

appearance 1+ d/300gr, 14+ screen - I'm grading conservatively to temper expectations. It's a really nice sort for Yemen, however you may see a few quakers, broken beans and minor bug holes.
