Full Cupping Notes
A wildflower note accents the sweetness in the ground coffee, and offers an alluring scent of raw sugar, and citrus. The wet aroma has a complex sweet scent of barley malt syrup, dark honey, with notes of butterscotch and cinnamon hard candy. Brewing a City roast, Ndiara presents a nice balance between sweetness and acidity, nothing too vibrant or sharp. Decadent sweetness carries an elegant side, a cup laced with cleanly sweet flavors of light caramel glaze and sugar in the raw, citrus notes of lemon and Naval orange, with rindy bittering at the back of the tongue. Honey and spice mark the aroma as the coffee cools, along with a hint of red apple. My darkest roast was only City+ (approximately 20F past first Crack), but I got a sense of what Ndiara has to offer with deeper development. Even at City+, roast flavors and sweetness started to take on aspects of dark chocolate bar, and drinking chocolate, with a plump berry accent that gives the cup a juicy note.

Ndiara is located about 140 km North West of Nairobi in Muranga North district of the Central Province. We don't often focus on Muranga lots because they are often a bit less dynamic in the cup than Nyeri region coffees. But the Muranga area is a rich agricultural oasis on the slopes of the Aberdare Mountains. Ndiara is at 1770 meters, endowed with rich volcanic soils that are deep, well drained and have a lot of organic material that are beneficial for coffee. As with other good coops in Muranga, the farmers typically hand sort the coffee cherry before submitting it for processing, removing coffee that's either not ripe, or too ripe, and can cause a defect in the cup. Small things like this make a huge difference in the resulting coffee. They are part of the Kiru Farmers Cooperative Society ("FCS"), who recently made the switch to a digital system of tracking coffee deliveries from their farmers (4800 in total), and payments. This is good news for farmers, as if they lose their receipt after delivering coffee cherry, there is now digital backup on record. This is an AA outturn, which are the largest beans that measure between 17/64" to 19/64". While screen size doesn't necessarily equate to a better cup, AA grades command the highest price.
