The Chemex "Classic" brewer is an icon. Featuring a one-piece glass body with wood collar and leather tie, the design has remained functionally unchanged for over 80 years, and for good reason! This brewer remains one of the most elegant and successful brewer and server combos, and it continues to make standout pour over coffee and to be a pleasure to use. At Sweet Maria's we like products that are old school and have stood the test of time; it doesn't get much more old school and proven than this.
The Chemex was created by the eccentric chemist/inventor Dr. Peter Schlumbohm in 1941, inspired by the Bauhaus school of design and basic laboratory equipment. It is on view at industrial design exhibits in museums around the world and is a fixture on the countertops of coffee enthusiasts everywhere. The sleek glass body has a removable wooden neck and leather tie for easy handling and cleaning and the non-porous Borosilicate glass will not absorb odors or chemical residues.
Since it is larger than other pour-over filter cones, you can easily brew and serve multiple cups using any size of Chemex. That being said, the "top" or brewing cone of the six, eight, and ten cup Chemex brewers is dimensionally identical. The sizes, such as they are, refer to capacity and size differences in the "bottom" carafe portion.
When we talk about why we enjoy "brewing with a Chemex" we're always using the brewer AND the Chemex paper filters together. Although other filter papers can be folded to fit and there are 3rd party alternatives, the brewing qualities we enjoy about the Chemex, like high filtration and clean cup characteristics, are derived in large part from using Chemex filters. Brewing with a Chemex typically requires a coarser grind size as compared to other pour-over brewers, but owing to the thickness of the filters sediment is not an issue even with fairly coarse grinds. The flip side of that is that grinds that are too fine can clog the filter and stall, so dialing in the perfect cup can be a bit of an adjustment if you're coming from another brewer like a Kalita Wave or Hario V60.
