Full Cupping Notes

While I wouldn't call this honey lot "fruit forward", there's definitely a pulpy/fermented fruit aspect that emerges from the deep-toned bittersweetness. The fragrance has an interesting scent of date syrup accented by hints of cooked fruit, and a savory-sweet herbal layer that smelled of marjoram. The wetted coffee grounds released notes of molasses, prune, and pipe tobacco. The cup carries rustic sugar notes, hints of dried fruits, and earthy cacao beans. A slightly acetic quality comes up as it cools, and brought up interesting hints like apple cider vinegar, and the fruity side of unfiltered sake. The coffee has buoyant, almost oily mouthfeel that's accentuated at the darker roast levels. It works excellent as espresso, but I don't think it's the coffee for milk drinks. Solo shots are bittersweet and thick, a hint of citric brightness feels slightly aggressive up front, but rounded out by a sweet note of dark fruit.

Origin & Farm Notes

Finca San Luis is owned by Luis Duarte, and is located in Ataco, Ahuachapan, not too far from the Santa Ana volcano. San Luis spans roughly 25 well-shaded hectares of land, across an altitude range of 1280 - 1400 meters above sea level. The farm is actually made up of several different "blocks" in close proximity to each other, though not necessarily connected. The Duarte family has chosen to plant their farm heavily in Bourbon cultivar, a tradition going back more than 50 years. One of the first things we noticed at their farms and mill is how incredible cherry selection is. Part of that has to do with how well the coffee is picked at the tree. But the cherries are then laid out on a tarp so that they can remove any green, unripe coffee before being delivered to the wet mill.  This honey process lot from San Luis is quite a departure from the fruity dry process we've carried the past few years. We found bittersweet intensity played an outsized role, though still accented by pulpy fruit notes, and pleasantly rustic sweetness. Check out our video tour of Finca San Luis from a visit in 2023.
