Full Cupping Notes

San Miguel's roast versatility and balanced flavors stood out. Grinding a City+ roast released a scent of caramel, with accents of molasses bread, and milk chocolate. Pouring the hot water on the grinds developed bolstered sweetness quite a bit, and the crust that formed at the top of my glass let off notes of piloncillo raw sugar, cinnamon cocoa powder, and a grainy hint of toasted barley green tea. The cup sweetness was caramel-toned and creamy, impressive for the origin. Notes of Dulce de Leche, Kraft caramels come through, along with a vanilla bean hint on the nose. The coffee cooled to notes of sweetened condensed milk, and a hazelnut chocolate flavor marked the aftertaste. The acidic impression was pleasant in our lighter roasts, tea-like at first, with a lemon accent. Full City roasts showed more intense cocoa bittersweetness, with a sweet-nutty accent of chocolate-covered almonds, and long finish of bittering cocoa.

Origin & Farm Notes

This small lot of Bourbon variety comes to us from San Miguel farm, in El Salvador's Santa Ana region. The farm sits right on the border with Ahuachapán and Son Sonate, an area referred to as "Tres Limites", in the Apaneca Illamatepec mountain range. If you're familiar with the coffees we buy from Finca Miravalles, you'll likely recognize the family behind the farm, the Duarte's. San Miguel is Luis Duarte's original family farm, that through the years was all but abandoned. Last year he and his son, Luis Jr, began the process of bringing the long process of renovation, stumping many of the old trees, and replanting large areas of the farm in Bourbon (red and orange), Maracaturra, Gesha, and small amounts of Rume Sudan and Kenia. Altitude and San Miguel spans a range of 1480 to 1620 meters above sea level. Thislot was harvested from the old Bourbon trees on the farm, just before the stumping started. The coffee cups very similar to the Bourbon we buy from neighboring Miravalles, and in a way, is symbolic of the revitalization and renewal that is well underway.
