City roasts of this wet process coffee hit the target for aromatic floral notes, and doesn't compromise sweetness! Pour over brews showed star jasmine, simple syrup, Earl Grey tea, limeade, and a honeyed finish. City to City+.
Full Cupping Notes
City roasts of Raro Boda really hit the target for aromatic floral notes, pulling out syrupy sweetness, and mouthcleansing acidity too. I actually ended my roast 1:20 after the start of 1st Crack. This would be "too light" territory for many coffees, but did not sacrifice sweetness and aroma in Raro Boda. The fragrance and aroma are potent with perfumed notes of jasmine and loose leaf tea, with clean raw sugars, and more fruit-type retro-nasal notes like citrus. Pouring hot water on the grounds lifted a sweet note of white honey, with hints of stone fruits. The level of sweetness at this stage was very impressive, especially considering the light roast level! At first it had the transparency of a simple syrup made with raw sugar, but then opened up to a sort of light clover honey note that held on in the aftertaste. The cup billowed with intoxicating floral aromatics, star jasmine is the obvious note that comes to mind here, but toothsome fruited accents are also perfumed, with a floral essence in aroma that come with fruit at its peak ripeness. Flavors of Earl Grey tea, bergamot citrus, fragrant lemon, and a tart-sweet limeade note all made for quite a compelling pour over brew!

Origin & Farm Notes
Raro Boda washing station is located in the village of Raro Boda, on the eastern edge of Uraga, a name quickly becoming well known for regional cup quality. This particular site buys from around 700 small scale farmers in the area, each with less than 1 hectare of coffee planted on average. Raro Boda was established in 2018, and they've continued to invest in wet processing equipment in an effort to improve quality and efficiency. They recently replaced all of their fermentation tanks with ceramic material which is much easier to keep clean than cement. Raro Boda coffee is collected from very high altitudes surrounding the station, up to 2250 meters above sea level! They produce both wet and dry process coffee, and we were really taken by the clean cup, and floral character of this particular lot.
