Full Cupping Notes
The dry grounds show balanced sweetness of light brown sugar, milk chocolate, and a hint of dried apple. Hot water brings up a bit of pumpkin spice bread, dusted with dark cocoa powder. This brews such a well-rounded cup at City+ roast level. The profile is highlighted by raw sugar sweetness, with a hint of fruit that adds to a pleasantly moderate level of acidity. Base flavors hint at grain sweeteners, like barley malt, with a note of wheat toast with honey. It strikes a nice balance of sweet and bittersweet flavors as it cools, and a faint dried apple note brings a lively aspect to this roast level. It should definitely take to darker roast levels to, though we haven't roasted many batches beyond Full City at this point. EA decafs generally have good body for carrying roast tone well, and this lot is no exception.

Origin & Farm Notes
This decaf blend comes from several small farms in Colombia's Southern Department of Huila. Colombia's coffee growing communities are largely made up of what are considered "small producers", with close to 95% managing 5 hectares or less. These are typically wet processed coffees, using small pulping machinery at home, fermented to remove the outer mucilage layer, then dried inside small drying rooms that help protect the coffee from the elements. The coffee is decaffeinated right in Colombia. The plant is called Descafecol, located in Manizales, Caldas. It's a state-of-the-art facility, partly owned by Coffein Compagnie from Germany. The method used is direct contact type using Ethyl Acetate, which can be naturally derived from fruits and vegetables, thus is generally referred to as a natural decaf method (often called "sugar cane decaf").
