Full Cupping Notes
The fragrance had a note of oatmeal cookie and cocoa, and the wet aroma pulled out caramel and roasted nut. The cup sweetness at City+ shows layers of blackstrap molasses, dark sugars, and an earthy sorghum syrup note that connects to a hint of aromatic wood in the finish. The coffee is accented by hints of almond, malted chocolate, and zested lemon that feeds into the acidic impression. Full City roasts are tangy and bittersweet, and flatten out the brightness quite a bit. The dark roasts should work quite well for milk drinks, or as espresso.

Garaldine Buitrago is part of a small group of coffee farmers in China Alto whose coffee we've been buying for a hand full of years now. We typically bulk these coffees together in a larger "China Alta" blend that's been excellent. But there wasn't much coffee this harvest, so we only able to secure two single farm lots for a total of 18 bags (Geraldine's is only 6 bags). Unlike many of the well known Tolima growing regions, China Alta is not too far from Ibagué, Tolima's capitol city. But the shorter distance doesn't mean it's easy to get to, and often involves some walking when road conditions are poor during the wet season. Geraldine's farm sits at 1900 meters above sea level, and is planted in Caturra and Variedad Colombia, the latter being a disease-resistant hybrid developed in Colombia.
