Brazil Dry Process Sítio Três Barras
Deep-toned coffee with thick, oily body, and substantial cocoa flavors that pair well with cream. Chocolate bittersweets, caramel cookie with almond, saffron spice note in the finish. City+ to Full City+. Good for espresso.
Full Cupping Notes
The fragrance had a brown sugar base note, accented by hints of cinnamon bread, and dried date. A scent of baked goods carried over into the wet aroma, with brown sugar and spice, like coffee cake, and a savory saffron note. Some of what we picked up on in the smells came through in the cup, though low intensity compared to more prominent bittersweet tones. Rich flavors of semi-sweetened cocoa powder made even our lightest City+ roast feel substantial, giving way to nutty-sweet hints, caramel cookie with slivered almonds, and a savory spice note in the finish. Full City+ roasts were deep toned, with a thick, oily mouthfeel. This coffee pairs excellent with cream, and works very well as creamy, bittersweet espresso too.

Origin & Farm Notes
This coffee is from Ednei Geraldo de Carvalho, whose farm "Sítio Três Barras" is located in Santa Rita de Caldas part of the South Minas region. At just 3 hectares, his farm is quite small by Brazilian standards. It also has very good altitude for Brazil, topping out at 1300 meters, and planted in Catuaí coffee variety. Ednei grew up on this land, and while most of his childhood it was planted in coffee, his father removed the coffee to focus on cattle when Ednei was a child. It wasn't until Endei had his own kids that they revived the coffee plantings at Sítio Três Barras once more. This coffee was purchased through an exporter in Minas Geraís who we were introduced to last year. We were really impressed with the quality of the samples they sent us. Dani, who manages operations and is a farmer herself, offered us access to a lot of new opportunities around Minas Geraís, working with small farmers like Marta and Evandro.
