Keeping Mexico coffee on our list is quite the challenge for us. We aren't currently traveling to Mexico, and most of the samples we've seen over the last few years aren't sorted to a standard we are happy with. This coffee was put in front of us along with Tenejapa Kulaktik (another on our list) at the end of the current harvest, and we were surprised by the quality of both. This lot is from a group called "Santo Domingo La Cascada", who are located in the Municipality of Siltepec, Chiapas. Cascada is situated at 1,700 meters above sea level along the Sierra Madre, and Typica, Bourbon, and Garnica are the common cultivars grown. The group consists of 65 farmers in total, coffee being a primary cash crop in this region for half a century. La Cascada is a nice mild cup, classic balance and roast versatility.
The dry grounds have a coffee cake-like smell, sweet brown sugar and cinnamon, and a sponge cake/baked goods aspect to them. The wetted grounds continue on the thread of baked goods, with hints of brownie, a fruited quality coming off in the steam that smells a bit like dried tamarind. Understated fruited accents are centered around a bittersweetness that's bears resemblance to sugar burning on pan. Like when making fresh caramel, but perhaps taken a touch too far. It's a smokey sweetness at City+ and Full City, with hints of apple and cherimoya fruit. As the cup cools, chocolate roast tones fill out the finish, chocolate walnut brownies come to mind. A mild to moderate cup in terms of intensity, and will prove worthy of both light and dark roasting.
