The small municipality of Santa Elena, La Paz is not far from Marcala, another coffee growing region in southwestern Honduras. Within Santa Elena, there is an area with many pre-Colombian cave paintings, scenes of animals, men and women are depicted on the cave walls. This coffee comes from this area, and is a blend of three small producers. The majority of the farms are planted in Caturra and Pacamara, with some IH-90 mixed in (a disease resistant, catimor-type varietal produced by IHCAFE - the Honduran government coffee association).

This coffee has a sort of subdued introduction at the lighter end of the roast spectrum. That is, grinding the coffee, the smells don't exactly billow out of the cup. But it's understated in this way, and makes quite a comeback in the brewed cup. From fragrance to aroma, there are moderate levels of sweet fruits and light brown molasses sugar, much stronger with hot water added to the mix. The cup shows excellent sweetness, counteracting bittering burned sugar and light cocoa powder tones. As the coffee cools, mild fruit flavors emerge with soft floral hints and citrus highlights, low in 'volume', but apparent. Acidity is moderate, well-integrated, and fades into a sweet finish.
