This coffee comes to us through a joint-effort of a local micro-mill owner in La Democracia, Huehuetenango, who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill in Antigua who handle the finishing touches and export the coffees for us. It helps us greatly to enlist local support, folks who not only know the land but also the local farmers. We put in quite a bit of work ourselves, tasting many rounds of samples in order to identify the premium-level coffees, as well as make several trips to the area each year meeting with farmers and collecting information. This coffee represents the harvest of a single-producer, Don Martinez, whose 13 bag microlot was too good to bulk with anything other coffees. The dry fragrance is very sweet, with an herbaceous side, like blackberry and fresh basil. Aromatics at City+ are akin to caramel crumble in sweetness, dry spice accents emanating from the wetted crust. The wet grounds are rife with caramelized sugar and butter, and a scent of plum-infused chocolate is lifted from the break. At CIty+ the brewed coffee has juicy body, and nice weighty mouthfeel like apple juice. This is a fruit-forward cup, flavors of plum and raspberry show well in the hot cup (near wine-like), making way for other fleshy fruit notes as the liquor cools. This is a fairly bright cup, the sensation is similar to the refreshing aspects of green grape (tartaric). There's a rustic side to this coffee too, like raw nibs or baking chocolate, a bittersweetness in both flavor and mouthfeel most apparent in the aftertaste of a cool cup.
