This coffee is from Flori Villatoro, who is part of a family we buy coffee from in the Huehuetenango highlands. In the past we've sold coffees from the Villatoros as a family blend ("Familia Villatoro"), and as single producer lots when there's enough coffee, and this is the first year we've been able to separate the coffee of Flori. Her farm is located in La Libertad region, sitting around 1700 meters above sea level at the low point. This is a fully washed coffee (wet process), meaning that the outer cherry is removed from the seed with a depulping machine that uses a little water and friction, then fermented overnight in order to wash away the sticky layer of mucilage, and finally laid to dry on cement patios in the sun. Flori's coffee comes to us through a joint-effort of a local micro-mill owner who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us. The dry fragrance of this lot from Flori Villatoro is sprinkled with dry spice accents, and toffee and brown sugar smells take much of your focus. The wetted crust gives off layers of sweet smells, caramel and toffee, maple frosting, walnuts candied with brown sugar and cinnamon, and more. The cup of City+ roasts harnesses the developed sugar sweetness smelled in fragrance and aroma, and "caramel sundae topping", "brown sugar bars", and "butterscotch chips" are a few notes jotted down in my cupping log. Both City and City+ roasts have a tea-like briskness, with a flavor note of English Breakfast tea coming up as the coffee temperature dips a little. Not a lot of fruit to speak of in this coffee, very subtle hints of dried apple in light roasts, that when taken to Full City are even less part of the flavor matrix. This coffee from Flori is all about sweetness, clean and succinct, and unrefined sugar notes in the finish leave a lasting impression.
