Fazenda Mirante is located in the growing-region of Campos Altos, the town itself sitting at 1000 meters, much higher than what is average altitude from much of the Cerrado region. This particular farm, Fazenda Mirante, sits at 1250 meters above sea level and this is a peaberry selection from their Yellow Catuaí. The peaberries are sorted out using vibrating sorting tables and screens which allow the small, rounded beans to pass through. This coffee is naturally processed, meaning the whole cherry is picked from the tree and then laid out to dry for roughly 30 days, after which the dried cherry and parchment layer are mechanically removed. This type of processing tends to impart some fruited flavor on the seed, as well as mute acidity, and produce big body. Roasting can be a little tricky, because there is usually much more chaff produced. Yes, chaff is messy, but more so, it is dark in color, and if still connected to the bean can give the impression that a coffee is darker than it actually is.
City+ to Full City roasting is recommended for brewed coffee, the latter also a good starting point for espresso. In this middle range almond and roasted chickpea notes are backed by toffee sweetness, a mix of sweet and semi-savory that works well. With the addition of hot water, a dark sugar and a note of natural dried peaches come up in the steam, along with a sweet nuttiness I liken to peanut butter and jam. Stone fruit allusions come up in the brewed coffee as well, peach fruit leather and unsulfured apricot, and surrounded by roasted nut, molasses, and bittersweet cocoa. Body has a nice weight to it, and the finish is surprisingly clean for a Brazilian coffee. Espresso shots at Full City have a surprising acidic kick, flavors of lemon, chocolate covered peanut, and bbq peach all distilled into one little shot.
