Serra do Bone has a nice sweet/bittersweet balance, highlighted by flavors of cocoa nibs, browned sugars, malted barley and a hint of orange brightness. City+ to Full City+ roasts are recommended for this classic Brazil flavor profile.

Fazenda Serra do Bone is located in Araponga, Matas de Minas, a region we used to find great coffees from before we switched our focus to Carmo de Minas. It's great to offer a new lot from Matas de Minas though, a beautiful area I visited years ago when we bought the excellent Brauna coffee. Serra do Bone is 160 hectares, situated at 1100 - 1200 meters. Serra do Bone has been recognized by multiple acknowledgements in the Cup of Excellence competition, including 1st position back in 2003. The owner Carlos Sérgio Sanglard has set aside nearly 50% of his farmland as a nature preserve.
The dry fragrance of City+ roasts have a smell of roasted barley and dry-roasted peanuts in the lighter roast, with more powdered cocoa entering the profile at Full City+. Adding hot water the scent shows consistent cocoa and nut character, with intensified bittersweetness of high cacao percentage chocolate bar. In the cup, the sweetness of light brown sugar is countered by the pleasant bittering flavor of cocoa nibs. The orange-like brightness is just a footnote to these powerful roast flavors, forming a classic Brazilian taste profile. Rustic sweetness intensifies as the cup cools. This is a nice selection for Single Origin espresso shots.
