Carlos Omar Aldaz' has worked his 3 hectare farm, finca El Huayacan, for the last 20 years. The farm has been in the Aldaz family for generations and is planted in Yellow Caturra, Typica, Bourbon and Pache as opposed to disease resistant hybrids that compromise cup quality. His farm is located in a small town within the San Ignacio District and altitude is right around 1500 meters above sea level. Carlos wet processes his coffee at home, depulping the coffee on the same day it is harvested, fermenting for half a day, and then drying in covered, raised beds for up to two weeks. We found this coffee to be one of the more fruited cups in comparison to our other Peruvian lots which comes through at a fairly wide range of roasts.
Carlos' coffee has a convincing raw sugar sweetness at a wide roast range, and fruited characteristics come on strong for a Peruvian coffee too, changing with roast degree. City and City+ roasts have dried raisin and brown sugar smells, the deeper of the two roasts giving off some carbonized/caramelized sugar roast pungency. Raisin and berry type fruit smells are raised in the steam after pouring hot water and culminate in a fruited-sweet aroma. These lighter roasts have mouth cleansing acidity like orange pekoe black tea with a touch of lemon juice, and berry notes accent a deep sugar browning sweetness that lies at the core of the cup profile. At Full City the sweetness is anything but restrained and offsets chocolate roast tones nicely, cooling to a plump berry jam flavor, with hints of toasted coconut flakes in the finish.
