This microlot from Jonathan Tocto was purchased through "El Palto" (Asociacion de Productores Cafetaleros Juan Marco El Palto). El Palto is a cooperative in the Amazonian Andes, in Northern Peru. Tocto is one of nearly two hundred active members, receiving agricultural and business assistance through the association collective. Founded in 2003, the group now farms a total of 549 hectares of land. Joining together as a collective has also helped them tackle the expense of becoming certified organic and Fair Trade.
The dry fragrance has a raw honey and toasted nut sweetness, with a touch of powder ginger spice. Hot water brings about a smell of nougat and honey, and the break is loaded with cinnamon stick and nut. All along the profile, notes of apple and walnut come through, and the cup has a puckering yellow apple flavor to it. The sweetness is like cane juice, and acidity is malic, like apple juice. A tea flavor comes out as the coffee cools, adding to the pleasant bittering black walnut flavor in the finish.
