This coffee is from El Palto cooperative, a group of producers in the Amazonian Andes. Like most of the region, farms are planted in Typica varietals, which I think accounts for the green nut flavor we taste in many of the coffees from the region. Senior Diomer Chavez Perez is one of almost 200 members, sharing many benefits that come with collective bargaining. The premiums they've acquired for quality have been reinvested in the farm and mill, as well as helped them attain Fair Trade and Organic certifications.
This coffee from Diomer Perez has a green nut and brown sugar scent in the ground coffee, very pistachio-like. The aroma is very much in the sugar browning matrix, with Full City roasts expressing both herbaceous and malt chocolate smells in the steam. We roasted samples to CIty+ and just beyond Full City. Full City is a sweet coffee, bold chocolate notes come through with roast tones that tone down the tea-tannic acidity sensed at lighter roast levels. City+ shows a nice brown sugar and black tea flavor, and mingling of pistachio nut and cocoa butter in the background.
