This coffee is from the "Bauka" coffee farmer group in the Aiyura Valley, Papua New Guinea. The group was founded in 2004 with a goal of giving women the opportunity to attain financial independence for themselves and their families using coffee farming as their vehicle. To be a bit more specific, these women were already quite entrenched in coffee production. However, once harvest and processing was completed, it was the men who would transport the coffee to the marketplace, receiving the payment. This is now changing. Together, they manage around 100 hectares of coffee, split into small plots. This lot is actually an "A/X" quality separation from a small plot on the plantation. The entire lot is a mere 6 bags! They have their own mill onsite, where all the coffees are processed, and they are then laid out to dry on raised beds, some covered, such as the one in the first photo below.
The aromatic profile of this Bauka lot has intense layers of fruit and sugar. A mixture of raw honey, fresh caramel, and ripe tropical fruits come up from the ground coffee of City+ roasts. The smells found in the wetted crust are just as potent, centering around molasses-like sweetness, and wafts of pineapple and jack fruit coming up off the break. The brewed coffee continues this theme, a hot cup tasting like fruit pastry, upside down cake with pineapple glaze, or guava danish come to mind. As the coffee cools, fruit flavors turn a bit tea-like, with underlying floral honey sweetness that holds through to the short finish, shifting into spiced accents in the long finish. There's a tannic aspect too, like what you'd find in black tea, and even that sort of bittering facet of peach skins or the pithy side of a citrus peel. It adds to the overall complexity of the cup (which is high!). Full City roasts have a subtle flavor of Dutch drinking cocoa, with a peach syrup note up front. An overall juicy coffee in both flavor and mouthfeel, one that promises depth of sweetness as well as flourishing fruited accents throughout a wide roast range.
