This is another of lot from the Bauka Plantation in Aiyura Valley. "Ginipa" is one of several small plots that group members manage on more than 30 hectares of coffee. Bauka was founded in 2004 with a goal of giving women the opportunity to attain financial independence for themselves and their families using coffee farming as their vehicle. They are a quality focused group, separating the coffee by plot and days of picking. This allows for the highest quality from each plot to be sold as micro-lot, and then the lower tier to be sold as a plantation blend (also much better than generic "A/X" blends we taste). This microlot is a total of 18 bags, and only being sold in 1, 2, and 5 LB increments.
Ginipa has a grain sweetness that carries through the aromatic profile, and into the cup. It's like toasted grains, a barley note, but with an unrefined sugar sweetness (barley tea with sugar?). The cup flavors are in line with this description, and have a mouth-cleansing quality. A City+ roast yields high sweetness in the cup, like the flavor of sugar with a bit of molasses intact. It's a necessary base flavor to offset grain and nut notes, which together are a nice combination. This is a coffee that benefits from City+ and beyond roast levels in order to develop the sugary aspect described and also builds a welcome, hefty body.
