"Bauka" is the name of the female run coffee farm group in the Aiyura Valley, Papua New Guinea. The group was founded in 2004 with a goal of giving women the opportunity to attain financial independence for themselves and their families using coffee farming as their vehicle. As a group, the manage over 30 hectares of coffee, split into small plots. There is lot separation in order to judge the different plots independently from one another. They have their own mill onsite, where all the coffees are processed, and they are then laid out to dry on raised beds. Many of the larger lot separations are sold off as individual micro-lots, and this "Bauka Blue" is a blend of several of the small lots, much too small to constitute being sold on their own, but too good to be sold as a general A/X blend. A welcome second lot of this coffee, keeping it on our roster for a just a little while longer.

The dry fragrance shares similarities with butter toffee and cinnamon toast, smells of sweet caramelizing sugars and honey wheat bread. Hot water raises a nice pumpkin bread smell in the steam: pumpkin cooked with brown sugar, and nutmeg spice. Full City roasts have a much more caramel-centric aroma, and the break has some dark cocoa roast tones. Cupping a City roast shows layers of raw sugar flavors, brown sugar first and foremost, but also more naturally unprocessed types like turbinado and even date sugar. An "earthy" side is revealed as the cup cools down a bit, peet-like accents in light roasts, and a bit more resinous and pine-like at Full City. Our darkest roast was in the realm of City+/Full City, and showed a surprising level of chocolate, and reminded me of a dark chocolate brownie. Acidity level is pretty mild, particularly muted with deeper roast development, which along with big body, lends itself to espresso application. A shot of our darker roast produced a milky espresso, with a complex, earthy dark cacao flavor. Full City and Full City+ roasts of Bauka Blue will work great for milk drinks.
