This coffee is from Finca San Sebastian in the Boquete region of Panama. Boquete is located in the lush mountain highlands of Panama, along the Caldera river (aptly named "Caldera", a type of volcano, and runs through Boquete and Volcan Baru National Park). Boquete itself sits at about 1200 meters, and the soft slopes of Baru Volcano (not to mention nutrient rich soil) provide prime coffee growing conditions. Finca San Sebastian is at 1400 - 1500 meters above sea level, and is planted mostly in Catuai along with some Typica trees as well.
Honey sweetness and light caramel tones make this Panama coffee a crowd favorite. Middle roasts are where we found the sweetest brew, letting first snaps come to a complete close, but halting the pungent smokiness that comes as as you near the rapid snapping of 2nd crack. These City+/Full City roasts have a dark caramel hue, and base flavor too, which rounds out crisp apple and toffee nut top notes. Acidity is mild, yet present, like the crispness of black tea or red apple. There's a pleasing roasted nut aroma too. While City roasts may not have quite the level of sweetness developed found at a shade beyond, San Sebastian still promises balance of sweet and bitter tones, and mild top notes will come into view for the patient drinker (as the cup cools down a bit).
