Roast Recommendations City+ is as light as I'd go, and we found the best balance from City+ to Full City; for those who like a dark roasted coffee, this one shows well with 2nd snaps too

This coffee was collected from small holder coffee farmers in and around the town of Santa Maria Yucuhiti, which lies in the Sierra Jurez mountain area (part of Sierra Madre Occidental). The farmers who contributed to this 20 bag blended lot are in the hills around 1600+ meters above sea level, and have mostly Typica and Bourbon types planted on their farms. The coffee tradition is one of "small holders", usually consisting of a few thousand trees, hand pulpers, and wet processing. The indigenous population in this region are the Ayuuk people (or "Mixe"), whose language ties them to the Olmecs, however local belief has them originating in the South American Andes. This is a Fair Trade and Organic certified coffee, meaning the farmers are following organic farming guidelines, and that payments are made in a transparent way for both farmer and us the buyer (we actually paid more than the Fair Trade minimum price for this coffee).

The dry fragrance has a smell of cinnamon toast in the middle roasts, honey-wheat sweetness with a cinnamon powder accent. Full City roasts also have smell of baked goods, aromatics more in line with chocolate cookie, the bittersweetness that comes with mixing baker's cocoa with brown sugar. The crust of City+ roasts has a much more up front caramel sweetness, which translates well in the brewed coffee too, a sweetness offsetting cacao bittering accents and roasted nut tones. This is a mild coffee in that the cup is much more about core coffee characteristics than flowery top notes. City+ to Full City is where we found the best balance of flavors, the cooling cup pushing notes of raw sugar and walnut, sweet breads, and cheap dark chocolate (like a dark chocolate Hershey's Kiss!). A prime candidate for those who like darker roasted coffee, Santa Maria Yucuhiti is a crowd pleaser served black, but also takes well to cream.
