Grapos (or Grupo de Asesores de Producci_n Orgnica y Sustentable) is a producer organization near the town of Tapachula, in Chiapas, Mexico. There are over 2,600 member farmers with growing areas around the Triunfo Volcanic reserve. Elevation is in the 1100 to 1250 meter range, and this lot is fully washed. The farmers producing this particular lot are actually certified "Bird Friendly", meaning that their farms meet certain criteria put forth by the Smithsonian, namely that their shade grown coffee areas also provide supplemental habitat for migratory birds. It also means a small premium paid to the farmers on top of the negotiated coffee price.
This coffee from the Grapos Cooperative has a convincing profile of caramelizing sugars, spice, and nut, and a surprisingly clean finish. The dry grounds have a clove and demurara sugar smell, spiced and sweet, and with background note of dried plum. The wet grounds are saturated with caramel and roasted almond, a very welcoming set of scents making this Mexico coffee stand out. The cup is very sweet, brown sugar and butter, with a flavor of coffee candies. More almond comes up in the cool cup, which tastes candy-coated and sweet, and is followed by dusty cocoa notes in the aftertaste. It's a fairly direct profile and one that makes for a nice daily drinking coffee. Body is dense too, and Full City and beyond roasts will make a great SO espresso.
