Don Victor owns and operates the Lentago farm just past Belen Gualcho, Ocotepeque. Ocotepeque is in the southwest corner of Honduras, bordering Guatemala and El Salvador, and has a rich history in coffee farming. The mountain ranges in this region provide altitude, microclimates, and rich volcanic soil that are ideal for farming coffee. This particular farm rests at the foothills of the Celaque National Park and mountain range at 1650 meters above sea level. Victor has two plots of land totaling roughly 4 hectares of coffee, and are planted in yellow and red Catuai, IHCAFE 90, Pacas, and Bourbon cultivars. He fully washes his coffee using an ecopulper, then sun-drying on patios. The green coffee is hand-sorted, which is ideal for removing defects that make it through the milling process. It's a family affair, and with 8 children, Don Victor's family are well-equipped to handle!
Don Vasquez' coffee is one of the highlight coffees from our newly landed Honduras container. The fragrance shows a mulling-spice tea element, apple tea with cinnamon sticks and allspice berries. Our City roasts also had sweet herbal tones, with a touch of butterscotch candy. The wet aroma at City+ has a red raisin and brown sugar smell, warming spice, and a baked apple note. We found the brewed coffee to be delicious, plain and simple! The sweetness is fruited in character, flavors of baked apple and refined sugars, and tea-like brightness adds a refreshing quality to the finish. No surprise the flavor profile widens as the cup cools, flavors of white grape juice, tart mountain berry, and mango tea emerge, along with an accent of fresh coriander. Full City roasts retain dark fruited elements, and are shadowed by bittering cacao nib flavor throughout. Body has weight from light to dark roasting, with the texture of apple juice. Full City to FC+ will make a good option for single origin espresso too.
