This a producer micro-lot from members of the cooperative Cocasam (Cooperativa Cafetelera Sanmarquena). They are in the Western region of Honduras known as Maracala, more specifically San Marcos de Colon. Instead of the usual regional blend, this particular lot is made up of several small producers specific to the village of El Portillo Grande. These farmers produce excellent coffee, but lots were too small to separate, and instead are blended based on similarity in both quality and cup profile. Marcala region has the advantage of an ideal climate to grow, process and dry coffee really well, the latter being a critical deficiency in other parts of the country that are more humid and wet. If you don't dry coffee really well, and give it a long "reposo" in parchment after, the cup flavors will fade and baggy notes will emerge prematurely. The farms that this lot is comprised of sit at and average of 1500-1550 masl, and are mainly planted in caturra, catuai, typica, and bourbon. This lot is certified Fair Trade Organic.
This micro-lot from Cocosam has a juicy and crisp cup character. The fragrance from the dry grounds and wet aroma are similar, and give a good sense of the cup flavors. The dry grounds have a nice scent of complex browning sugars, with toffee in light roasts and toasted caramel in deeper roasts. There is a fruit aspect too that is like dried stone fruits and tamarind. In the wet aromatics there is a butter pecan smell that comes up off the wet crust, and honey granola on the break. The cup has a bracing, crisp acidity reminiscent of orange zest. A juicy note of red apple and mulling spice are particularly apparent in City+/Full City roasts. The cool cup shows hints of apricot and peach, and the finish is like dark cacao.
