This coffee is from Aler Villatoro, one member of a family group we buy coffee from in the La Libertad district of Huehuetenango. He has two farms in the town of Peña Blanca, both ranging in altitude from 1700 to 1850 meters above sea level. Aler's family have also built out a sizable wet mill operation in the center of town, complete with depulping machine, washing channels, and large cement patios for drying coffee. It's built alongside the river which is the water source for washing the coffee. This coffee comes to us through a joint effort of a local micro-mill owner and intermediary to us who is able to process and separate the micro-lots we approve, and a highly sophisticated dry-mill who handle the finishing touches and export the coffees for us. The dry fragrance of this lot from Aler Villatoro has a sweetness like raw honey along with hints of dried stone fruit. The wet aroma is even more fruit-forward with a punch-like fruited sweetness and a honey drizzled almond note lingers in the steam. When brewed, light roasts show developed sweetness in the cup, paired with complex berry top notes and a cardamom spice finishing hint. A candied citrus peel note is revealed as the coffee cools off some and citric acidity illuminates the cup. At Full City bittersweet flavors of high % cacao help construct a sturdy core flavor. A fragrant honey aroma comes as you move through the coffee, developing a flavor aspect of honey-infused dark chocolate truffles. Full City and Full City+ roasts yield velvety chocolate-toned espresso shots marked by plump, dark berry hints and a creamy nut tone that was absent in the brewed coffee.
