As you descend into the picturesque town of Antigua on the road from Guatemala City, you will see an old brick wall and the unlikely gold script lettering that reads "Cabrejo." This is the entrance to the home of Agustin Fashen, and the gateway to the lower part of Finca Cabrejo that lies between the one-way roads in and out of Antigua. To get to the higher part of the farm, you will find a much less ornate sign, if you can find it at all. It spans a wide range, from 1,585-1,920 meters, and the trees seem to be in various stages of care, various types, various ages. That is why the farm is undergoing renovation, adding better road access and replanting some parts. While the main shrubs are Bourbon, Caturra, and Catuai, there are new plantings too. This is a lot separation of a fairly new planting of Villa Sarchi. A dwarf Bourbon hybrid, short and dense foliage, it originates from the town of Sarchi, Costa Rica (see first pic). This varietal does well at high altitudes, producing coffee that is often quite sweet and with lovely acidity.
This lot of Cabrejo has noticeable cup differences than the Invernadero lot we previously listed. The dry fragrance has a fulfilling scent of dark brown sugar and roasted nuts, a bit like pecan pie. Roasting toward Full City brings about burned vanilla, toasted sugar, and raisin. A wet crust shows more of the caramelizing sugar smells, like fresh saltwater taffy, and the break lets off a scent of toffee and nut. The flavor in the cup is loaded with caramel, and with matched mouthfeel, creamy and thick. Sugary sweetness is offset by notes of red apple and Asian pear, a bit of cacao nibs in the back end. At Full City, dark fruits like plum and fig show in a cool cup, and the cacao finish is bolstered, rich and bittersweet. This Cabrejo lot finishes very clean and pointed, and also makes an amazing espresso.
