Crisp, refreshing Asian Pear notes, bittersweet cacao, baker's chocolate, and a nice milkiness in the body. The very clean finish indicates cherry selection was a high priority with this lot. El Inteligente's mouthfeel is not one of the forward sensory components but is sturdy nonetheless helping to make this the tremendously well balanced coffee that it is. City+ is ideal.

El Inteligente is comes from an old coffee estate overlooks the colonial city of Antigua, and is situated at a range of 6000 feet altitude. The farm dates to early colonial times, but coffee was planted in the late 1800's and first exported in 1918. The farm is said to have a unique micro-climate in the Antigua valley as well as hillside exposure and well-draining soils. El Intelligente refers to a specific block of the farm, planted in old Typica and Bourbon cultivar trees. It has the best sun exposure, and ideal topography. To form this lot, we cupped too many small "day lots" to count, selecting those that had the best sweetness and brightness. Day lots are small harvest batches from particular areas of the farm. El Intelligente is a from the upper part of the farm so tends to ripen in the middle harvest.
Inteligente is a very clean cup, and an approachable coffee in its finest form. Toasted sugar, fresh butter and vanilla meld in the fragrance to create a sweetly complex aromatic introduction. The break gave us more sweetness but this time in the form of honey, toffee and later molasses in the city+ roast. Inteligente is a plot laden with more Typica trees than are commonly found in Guatemala. In my opinion, one of the classic flavors in well maintained Typica is that malic flavor, and its readily apparent in this lot. The City roast gave us crisp, refreshing Asian Pear notes while the CIty+ had more pear although this time reminiscent of Bosc. Although there were certainly flavor differences between the roasts I also found more commonality within them than we normally do. Bittersweet cacao, baker's chocolate, was apparent in both flavor profiles as was nice milkiness in texture. Both coffees finish very clean; exceptionally clean. Cherry selection was obviously high priority with this lot.
