Wolo Wio is a blend of coffees from five neighboring towns in the Ngada District of Flores. The name basically means "peak" or "hill", which we're using becase the five towns - Wolo Wio, Tubu Tana, Watu Ata, Leko Pake, and Wawo Wae - represent some of the higher elevations in this volcanic region (near Wawo Muda, the active volcano). They're part of a coordinated effort to unite coffee growers from neighboring villages in a coffee farmers cooperative, whom we've been introduced to through an intermediary working in the region. Much of the kinship groups in these areas are matrilineal, with land being passed through women. Because of this, you see a lot more women in leadership positions at the farm and cooperative levels. Most of the coffees are processed on hand cranked or motorized depulping machines on the farm, fermentation in buckets or small tanks, and then drying on raised drying beds. Because of the nutrient rich soils, they are able to grow coffee using fully organic farm practices, though they are not certified at this time
This Flores has big body and weighty mouthfeel when brewed, sweet and bitter tones balanced, and mild apple-like acidity when roasted to City+. The aroma weaves together sorghum syrup and honey wheat bread, a nice dark sweetness that leads into roasted nut and grainy notes in the steam. City+ is a good starting point for roast level and you'll have no trouble finding a balancing sweet undercurrent of unrefined sugars in the City+ to Full City roasts. Cup flavors range from sweet bran muffin, cocoa powder, rice syrup, and honey-drizzled nut. A very versatile coffee in terms of roast degree.
