This Yirga Cheffe lot comes from a washing station in the highlands of the Kochore Woreda. This coffee was purchased from the Aseffa family who run the private washing station, buying coffee from small holders in the surrounding hillsides. Altitude where the coffee is grown ranges from 1850 at the low end on up to 2000 meters. Aseffa Station has a wet mill onsite where they process the coffee, washing and fermenting overnight, and then laying to dry on raised drying beds. The coffee is prepared to Grade 1 standards, hand picking through the coffee for defects after passing through the dry milling machines. Light roasting is where this coffee shines, showing fruit to floral top notes, and acidity that shines bright. Some of the beans are very small (14 screen) and may pass through the grid drum of a Behmor roaster, but most will not. And while small, the high altitude makes for slow maturation and high density, meaning it will withstand high heat application.
The aromatics of this Yirga Cheffe have a potency to them, with sweet notes of refined honey out front. Floral jasmine notes are impressive, and work well with flavors of stone fruit. The wet aroma has a sweetness that reminds me of sugar browning on a pan, fresh caramel crisp, and a red fruit mixture. The cup profile is delicate and refined, and acidity shines brightest in City and City+ roasts. The coffee is densely sweet, honey being the dominant characteristic that stands out to me, holding on in the long aftertaste too. Citrus notes highlight the cooling cup, kumquat, pink grapefruit, and satsuma coming to mind, and the acidity level has a clean citrus element to it that reminds me of mandarin orange. Darker Full City roasts have an emerging bittersweet cocoa flavor that instead of distracting, add weighty bass tones to an already complex cup profile, fruit notes shifting toward darker stone fruit and even grape, and the bright nature of this coffee remains intact. But still the lightest level of City roast, ending just when First Crack completes, is where the bright and dynamic flavor of the Kela Kochore really soars in the brewed cup.
