This small, 3 bag lot is from a single farmer in Perquin named Mario Ramos Ventura. The town of Perquin is tucked away in the Cacahuatique mountain range. "1000 meters" is the elevation purported in the information we were provided, but I think this must be the elevation reading at the cooperative and not the farms. El Mango's coffee behaved like dense coffee when roasting with relatively gentle first cracks without pulling back on heat. It has surprisingly high acidity for El Salvador coffee too, an attribute generally associated with dense, high grown coffees. Mario belongs to a cooperative in Perquin, who with the help of a local NGO, have built out a central mill facility where coop members can wet mill their coffee and dry on communal patios. For most of the farmers it's a hike to get to the mill (7 hours!) but one of the better options for being paid the most for their coffee.
While Finca El Mango's dry fragrance may seem muted in terms of top notes, the cup has a lot more in store. We found that City and City+ roasts leave room for El Mango's inherent vibrance to cut through the caramel and nut-toned core flavors, as well as some dried fruited top notes. The brewed coffee has compact, unrefined sugar sweetness, marked by an herbal lemon grass-like top note. 'Lemon' also best characterizes the acidic impression at this roast level too. The aftertaste is clean and crisp and unfolds to a toffee-coated nut flavor. Full City roasts are loaded up with chocolate roast character and a raisiny hint. El Mango is a versatile coffee, crowd pleasing at a wide roast range, and shows well under different brew methods such as full immersion like French press, pour over and makes a syrupy chocolate espresso.
