My best brews were within a fairly tight roast range, where toasted sugar, restrained fruit, bittersweet cocoa, barley malt, and mild black tea flavors are found. City+ to Full City. Good for espresso.

Los Crestones is an area of unique rocky outcroppings in the area of the Chirripo National Park, a zone called La Piedra de Rivas. It is also a region of coffee production adjacent to the parklands, in quite a different zone than the major areas one might be familiar with; Tarrazu, Central Valley, or the Western Valley regions. This crop selection is from a micromill in Chirripo town, Los Crestones, that is very unique considering its location on the slopes of the country's highest peak, Chirripo. Los Crestones is a coffee producer group who shares a micro mill, drying patios, and dry-mill too (they benefit from being able to use parchment to fuel dryers when needed, as well as saving on paying someone else to dry mill their coffee). This lot is a regional blend of coffees processed at Los Crestones and separated out by quality. Most of the farms are planted in both Caturra and Catuaí, and altitude ranges from 1500 to 1800 meters above sea level. 

The fragrance of the dry grinds show a pungent caramelizing sugar sweetness, with dried fruit and a vanilla spice note accents. The wet crust has a saturated dark sugar smell, a sweetness that is highlighted by roasted almond accents. City+ is a good baseline roast level, the brewed coffee showing restrained dried fruit flavors, and more dominant base flavors of burned sugars and cocoa. As the coffee cools a pleasant raisin note appears, as does a mild black tea flavor and mouthfeel. Full City roasting bolsters rustic fruited notes and cocoa roast tones, and a barley malt aroma marks the finish. My favorite roasts of Los Crestones are found in a fairly tight range, and I wouldn't venture too far outside of City+ to Full City to achieve the cup I describe.
