This is a blend of coffee from small farms in the Planadas area of Tolima, with a small amount from small-holders in Ataco as well. They're all part of a local association in the region, a cooperative of sorts, who with an elected board who help organize everything from agronomical assistance, farmer payments, and facilitating export. The farms in this region are mostly above 1500 meters, and some of the area sees peaks of 2000. You see a lot of Caturra and Variedad Colombia on the farms, with the occasional old Typica shrub mixed in. This coffee is fully washed, overnight fermentation, followed by drying on raised, covered drying beds. We actually purchased two lots from this association with the help of an intermediary we work with in Medell_n, who recently built out their own state of the art dry-mill.
The dry fragrance of this Tolima coffee has a dried apple smell, lightly fruited, accompanied by malt sugar sweetness. There's a smokey cedar hint that is bolstered at Full City along with a chocolate/cacao nib smell. The wet aroma has a strikingly similarity to dark chocolate brownie mix, a bittersweetness sensed on the wetted crust, walnut and baking spice notes released on the break. The cup is pleasantly balanced, a thick, dark sugar sweetness verging on the flavor of burned sugar. That smokiness alluded to in the aromatics shows itself in the cup too, coming off as roasted nibs, and melting into a burned sugar, smokey-sweetness in the aftertaste. Acidity is moderate, most like that of apple juice, which highlights apple and pear accents in the cup too. As City+/FC roasts cool, a chocolate brownie cup flavor comes full circle. The coffee has a 'richness' to it, I mean that in a 'German chocolate cake' way, with a nice walnut note in the finish. This is an ideal profile for single origin espresso too, a very "classically" toned shot from Full City to the beginnings of 2nd snaps.
