Roast Recommendations We liked aspects of both the light City roast as well as the complex sweetness of the more developed City+ roast. A melange of the two roasts was really beautiful!

This coffee represents a blend that is made up of some of the better lots that we cupped from the Timana area of Huila. This is not a lot we "constructed" by aggregating the coffee of separate farmer lots. Rather, it was offered as an already built 40 bag chop. But we thought it was such a solid coffee, and when we brewed our sample roasts of it the cup was even better than it was on the cupping table. Huila is a unique part of Colombia in that coffee can be grown at extremely high altitudes due to the climate that is a result of being in close proximity to the Equator. The small farms in the are are planted mostly in Caturra, and are situated in the highlands. Processing is simple, and utilities rudimentary, but quite efficient when done cleanly as this lot exemplifies.
This is a nice drinking coffee, not a screaming acidity bomb. The dry fragrance gives a good suggestion of what is to come in the cup; cane sugar sweetness, malty, vanilla, with fruited accents of plum, pear and raisin in the darker roast. The wet aroma has abundant vanilla and caramel sauce (as in creme caramel dessert), with a dried fruit accent. The cup is very sweet. The lighter roast (City) has a more lively white grape fruited aspect, with raw cane sugar sweetness, and some malted caramel-vanilla notes coming through. The finish is a bit short at this lighter level, a bit grainy. That's why I gravitated toward the more developed City+ roast we did. When the coffee was warm, the darker roast has a complex sweetness of browned sugar, and fruit sugars from plum and raisin. There's a more tangible sense of viscosity to the body, with a finish accented by cinnamon spice and milk chocolate. I blended the two roasts in a cup to create a roast "melange" and found a really nice cup. I recommend it in addition to straight roasts.
