This coffee comes from the village of Apia, located within Risaralda district, 50 miles west of Bogota. Apia is situated between three natural parks (including Tatama), and the coffee farmers in this region have worked to instill organic farming practices into the local coffee culture. This blended lot is made up of farmers in the region who are members of a local coffee association focusing on organic produced coffee as well. Primary cultivars are Supremo and Castillo, and the range of altitudes is 1500 to 1900 meters, quite good. They use traditional processing methods, hand-cranked pulpers, fermenting and washing in the same tank, and then laying to dry on raised beds (often covered to protect from the rain).
This lot from Aria, has a fragrance of raw honey and fresh fruit, a fairly complex aromatic profile in the dry ground coffee. Hot water brings fruits into focus, apricot and nectarine, masked by a thick scent of honey and butterscotch. There's a "freshness" to the smell too, slightly herbal, but sweet, and also sensed in the cup a bit too. This coffee brews well. At City+ roast, the flavor is very sweet and fruited up front, an initial 'hit' of banana makes way for a long note of fresh apple juice. The acidity, too, is quite apple-like, malic and refreshing. The sweetness more and more goes toward raw honey as the coffee cools, and body is silky, and with weight. Like the aroma, there's a bit of herbal freshness in the cup, a mineral aspect in the finish, but I don't read this as anything other than just being fresh coffee and expect it will settle down a bit in the coming weeks. Even so, this coffee has a beauty that shines with the proper roast, which thankfully is across a fairly wide range. City+ is as light as I'd go, and in my opinion, the sweet spot for this flavor profile. SO espresso will show especially well in the Full City/Full City+ roast range.
