The growing region in La Plata where this coffee is from, sits high above the Rio Pa©z, on a ridge across from another coffee area, Inz. This is a single-producer lot, part of a new group who have formed in this region. The farm, El Guayabo, sits at 2000 meters above sea level, and is roughly 3 hectares planted in both Caturra and Variedad Colombia. The coffee is processed onsite using a small pulping machine, fermenting the coffee for about 14 hours to remove the sticky mucilage layer, and then drying on raised beds in covered "parabolicos" (green house structures that help facilitate even drying). This is the first lot we've purchased from this newly formed group in La Plata, a mere 6 bags of milled coffee, but we've already begun putting together a slightly larger amount for our next container at the end of the year.
The dry fragrance is rife with honey smells - raw, clover, dark - replete with the retronasal response that you expect from the real thing. There's a sweet cinnamon-sauce scent too, that is built up in Full City roasts, a cue taken from hot, sweet, cinnamon rolls. The wetted crust shows big sweetness, more honey with an accompaniment of creamy pistachio giving off a scent similar to baklava. City+ roasts are so sweet, and with citric-like brightness that cuts through. A rindy orange juice flavor comes up as the temp dips, followed closely by nectarine and kumquat notes, along with a bittering raw cacao nib flavor low in the profile. The combination of sweet fruit and bittering undertones creates a nice tension in the cup, and a tart cranberry high note adds to the cup complexity. A wonderful brewed coffee in the middle roast ranges, and as you head toward 2nd snaps, the fruited sweetness is exchanged for more cocoa/roast bittersweetness.
