Finca El Silencio is a small-holder farm in the Inza de Cauca region of southwestern Colombia. This region is rife with small-holder farmers like Don Manuel, who operates El Silencio, growing coffee on much less than 5 hectares of land and using hand-crank pulping machines to process their coffee. Most folks in the region process batches daily, meaning all the coffee from a single day's harvest is processed by itself - not mixed in any way. The coffee cherry is pulped, and then laid out to dry in covered "parabolic" raised drying beds. It's this attention to daily selection and processing that helps with controlling of quality - on the producer's end, and on our end, as we are able to taste separate day lots as opposed to a mix of quality that comes with blending multiple day's harvests. This is an 8 bag lot, one of the smallest in the container, and also one of the higher scoring coffees of this group.
The dry fragrance is honey sweet, inciting a retronasal floral reaction, and with suggestions of blackberry, walnut, and a delicate tea note too. Once water is added, the sweetness turns toward creamy caramels, along with a smell of pecans candied with brown sugar, butter, and cinnamon. Fruited notes come into play in the cup, and have a refreshing quality in both City and Full City roasts. Our City roast showed persistent underlying raw sugar and honey sweetness, giving way to fruited notes of mandarin orange, and red apple. Tea notes ring out through the finish, and are rounded out by bittersweet indications of baking cocoa. City+ and Full City roasts are syrupy sweet, building a chocolate/roast flavor that is paired with dark plum and grape, both with a winey ripeness.
