The cup of Caficultor Perfil shows a nice blend of unrefined sugar and honeyed sweetness, along with dashes of raisin and dried cherry. An illuminating tartaric acidity highlights the cup, and middle roasts develop lasting chocolate bittersweetness. City+ to Full City+. Good for espresso.

This coffee represents a blend that is made up of some of the better lots that we cupped from the Timana area of Huila (the first photo is looking down at the town from above). We constructed this from a small group of producers, neighboring farms in the region. They are part of a larger 30+ member association, put together in order to help with production and export of their coffees. They grade the coffee deliveries upon arrival, and "profile" (pefil - "pur-feel") is the category used for the coffees scoring above 85 points, and in the case of this blend, 86 points and above. Most farms are planted in Caturra, sometimes intermixed with Variedad Colombia, and grown between 1500 and 1900 meters. Processing is done onsite with hand crank pulpers, and the coffee is dried on raised beds. Note that we find an occasional (1 per 300 grams) dark bean escaping the color sorter and making it into our bags. These are easy to spot before roasting, and best removed.
City+ roast is a great starting point for this coffee, fragrant accents of dried fruit along with candied nut and cocoa. The aroma is rich with honey, and chocolate tones, and fruits are built up the closer you get to Full City roast level. You can develop quite a bit of sweetness and body with this coffee, and it shows well in the City+ and Full City range. Unrefined sugar and toffee flavors build out the middle profile, and mild to moderate acidity (a bit like green grape/tartaric) illuminate the cup all the way up to Full City. City+ shows tart/sweet golden raisin and dried cherry hints when the cup cools, along with a honey wheat flavor. There is a chocolate element that sits somewhere between fine drinking cocoa and bittering cacao that makes for a lasting finish. A great option for single origin espresso too, Full City shots show lasting chocolate bittersweetness, and a tart brilliance on the sides of your tongue.
