Colombia Huila Bruselas

The cup is very juicy, and with great mouthfeel. Full City roasts have rich chocolate notes, and brown sugar sweetness. Dried apple and pear come out in the cup, which fade into a powdery cocoa finish. This coffee does great at Full City and I imagine would make a great single origin espresso all the way into 2nd crack. Full City to FC+.

The Bruselas municipality of Pitalito, Huila, is ripe with coffee farms and many of the coffees we've brought in this year are from the area. There are currently a couple small-holder farm lots for sale on Sweet Maria's, but this particular lot is comprised of a blend of several day lots that we selected on our cupping table based on profile similarities. These lots were much too small to offer on their own, and even together, account for 10 bags in all. Contributing farms are nearly 100% Caturra varietal and processing is "traditional", and handled onsite. The cherry is depulped using a hand-crank machine and fermentation happens overnight. The coffee is laid out on raised beds where it will dry over the course of 7 - 10 days. These are the last lots of the season, and quality is still quite high.
The aromatics of Huila Bruselas are sweet and with heavy chocolate tones. At Full City roast levels, the dry grounds have a smell of filtered honey and milk chocolate, while dark roasts have more of a cacao nib note. Hot water brings up the smell of black plum and malt, with a buttery scent of ghee (clarified butter) and brown sugar. The cup is very juicy, and with great mouthfeel.
