The Bruselas municipality of Pitalito, Huila, is ripe with coffee farms and many of the coffees we've brought in this year are from the area. There are currently a couple small-holder farm lots for sale on Sweet Maria's, but this particular lot is comprised of a blend of several day lots that we selected on our cupping table based on profile similarities. These lots were much too small to offer on their own, and even together, account for 10 bags in all. Contributing farms are nearly 100% Caturra varietal and processing is "traditional", and handled onsite. The cherry is depulped using a hand-crank machine and fermentation happens overnight. The coffee is laid out on raised beds where it will dry over the course of 7 - 10 days. These are the last lots of the season, and quality is still quite high.
This aromatics of Huila Bruselas are very sweet and with allusion to a fruited profile that is later found in the cup. At both City+ and Full City roast levels, the dry grounds have a strong mixture of chocolate and cinnamon, with dried cherry and honey. Darker roasts are more dark cacao and have a tinge of cedar wood. Hot water brings up the smell of spiced fruits. Our light roast has an aroma similar to apple cider and mulling spices.
