Thermometers

Most dedicated home roasting appliances come with a built-in thermometer, though usually that reading is taken inside the bean chamber, not in the coffee itself. If you really want to know what is happening to the roast, having a thermometer is the bean mass is key. It is not essential, because over time you can learn to use your five senses to tell what is happening to the roast, but having a temperature reading can help you tremendously. The stick thermometers are useful in some applications (hot air poppers, and stovetop); the digital thermometers with flexible temperature probes are handy in many situations.

This is a pocket-type instant read thermometer that has a 0-550 degree range. It is a low-cost alternative to $20-$40 thermometers that will read temperatures in this range, required for monitoring coffee roasting. The face cover is polycarbonate, but as long as the shaft is exposed to the high heat and the face is not it will be fine. The shaft is stainless steel.

You can calibrate this thermometer by turning the nut on the stem (calibrate by putting the stem into boiling water, which is 212 degrees F at sea level). You might want to calibrate it even before its first use, since vibration in shipping can affect the setting. The dial face is just over an inch, quite small, but it does have a magnifying lens to make it a little easier to read. The 5 inch shaft works very well for dropping into stovetop poppers, or most air roasters and air poppers. And hey, it costs five bucks! It has no clip besides a little pocket clip ... We use this type of probe on our sample roasters, test roasting equipment, and our 12kg drum roaster too. Whether you are able to measure bean temperature, or hot air temperature, you can use a basic thermometer/thermocouple probe to make notes and, ideally, reproduce roast results. Having 2 probes allows you to (for example) have one directly probing the mass of roasting coffee beans, and the other to check the roast chamber air temperature (or input air temp ... or output air temp etc). This is similar to how commercial roasters check coffee roasting temperatures, by comparing and monitoring bean temperature, to "environmental temperature".

Exactly how you want to use the ThermoPro, and how you will install it, is going to be up to you. But when we were checking out options for a thermometer that can measure 2 temperature points at once, it was a meat thermometer that stole the show. ThermoPro has great reviews, and the temperature range it can measure works great for coffee roasting. The 15 cm long metal probes are less sensitive than raw thermocouple beads, but are easier to postion and last longer! It's a well-built device, and the AAA battery is included to boot.
