But that wood collar with the leather band on the traditional Chemex models is a bit anachronistic. I mean, it serves a function; you do need some insulation for your hand as you pour your Chemex coffee.\u003cbr\u003e\u003cbr\u003eIf you don't like 70's aesthetics, you have an option with this 3 cup model.. It's sleek, it's clear and makes coffee the same as the other Chemex models. Being much more compact than it's larger siblings, it's the right choice if 6 cups is just too much coffee.\u003cbr\u003e\u003cbr\u003eThe glass handle is thick and sturdy but hey, it's glass. My estimation is that you would probably crack the carafe itself long before you would crack the handle, so this model is no more or less fragile than the others.\u003cbr\u003e\u003cbr\u003eThe key advantages to using a Chemex are still true: the coffee-water mixture is the right temperature (between 195-205°F) from the beginning of the infusion; you control infusion time based upon the fineness of your grind and pouring technique; and lastly (and I think, of great significance) is that you can keep this system very clean. It yields about 16 fluid oz. of coffee.\u003cbr\u003e\u003cbr\u003eA disadvantage of paper filters is they can impart a flavor to the brew, especially the thick Chemex filters, so pre-wetting the filter is key to excellent brewing especially since paper taste and heat loss are more noticeable when brewing with smaller brewers.\u003cbr\u003e\u003cbr\u003eYou will need to buy Chemex filters. Other brands of filters don't work well with Chemex because the drip opening is large. The weight of the coffee and hot water will probably make a thinner filter break at its seam. We would trust this dripper to withstand the abuse of travel, camping, etc., but it's not a thick-walled beast. One could easily bend the metal with a little force. It's lightweight and has a delicate feel to it. That is what I asked when I first saw the Hario V60.\u003cbr\u003e\u003cbr\u003eI was used to Melitta-type filtercone holders that have 1, 2, 3 holes in the bottom. The fewer holes, the longer the coffee and water tend to infuse. More infusion means more extraction of soluble solids, which means more flavor in the cup.\u003cbr\u003e\u003cbr\u003eBut what I found was that the Hario V60 can result in excellent brews if you use the right pouring technique. It's all about the pour. You don't just dump a load of water on top of coffee grounds in a V60 and get a good cup. It doesn't do it for you ... you must coax the extraction of solids from the grounds, and this involves both a good pace and good pattern in how you add water to the coffee.\u003cbr\u003e\u003cbr\u003eI would say that you need, yes need, a kettle with a thin spout similar to a Hario Buono to get a good cup from the V60. When creating a brew profile, you can adjust the bloom ratio and time, number of pulses, time between pulses, the water temperature at each step, and the underlying brew ratio between water and ground coffee. Each profile can be split between the single serve and batch brew baskets, so you can easily scale your recipe up or down based on your preferences. Each time you brew, you can choose how much coffee you want to make and Aiden will use the recipe to tell you how much ground coffee you need to add and then execute the brewing to your specifications.\u003c\/p\u003e\n\u003cp\u003eDon't want to deal with all that? You can also use the instant brew function and Aiden will brew just like a standard coffee maker. Put the amount of water you want to brew into the reservoir, add as much coffee as you'd like, and hit \"Instant Brew.\" Mr. Coffee eat your heart out.\u003c\/p\u003e\n\u003cp\u003eSomething else that really stands out, perhaps \u003cem\u003ethe\u003c\/em\u003e key feature, is the ability to brew a single cup. Literally, you can just brew into your coffee mug using the single serving basket. This was great for the afternoons or for those instances when we only had a few grams of a particular coffee left. We had solid results using the profiles we created ourselves as well as the three built in standard profiles (Light Roast, Medium Roast, Dark Roast). The coffee we got from this brewer was just consistently solid.\u003c\/p\u003e\n\u003cp\u003eSo with all that said does the Aiden live up to marketing? In our experience, yes, and that’s why we’ve decided to carry it in our store. We’ve really enjoyed brewing with it, and it’s a coffee brewer we feel good about recommending. Does that mean we recommend it for everybody? Well...not quite.\u003c\/p\u003e\n\u003cp\u003eThere are a few things we think anybody considering the Aiden should be aware of. For one, the LCD screen and control knob work well and are one of the standout features, but they have a bit of a learning curve. The manuals are a little sparse on explicit directions for how things work, so a lot of the learning process comes down to twisting that control knob and experimenting with the settings and control scheme. If that kind of exploration sounds fun to you, we think you'll love the Aiden. We enjoyed it ourselves, but if looking at an LCD screen first thing in the morning doesn't seem like a good time, or if learning by doing is not your thing, using the Aiden could prove to be a frustrating experience.\u003c\/p\u003e\n\u003cp\u003eAnother thing to be aware of about the Aiden is that it \u003cem\u003ecan\u003c\/em\u003e connect to the internet and does have an app. These features allow you to update the firmware, register your product (which we recommend - you get an extra year of warranty), and Fellow will send over brew profiles for coffees they sell through their website, but we know that a coffee maker that can hop on the information superhighway and automatically update itself isn't for everybody. The good news is that you don't need to \"be connected\" to brew coffee. I mean, it serves a function; you do need some insulation for your hand as you pour your Chemex coffee. But now you have an option, with this elegant, simple, all-glass design. We carry both the 8 cup (40 oz) and 6 cup (30 oz) models. It's sleek, it's clear, it makes coffee same as the other Chemex models.\u003c\/p\u003e\n\u003cp\u003eThe glass handle is thick and sturdy but hey, it's glass. My estimation is that you would probably crack the carafe itself long before you would crack the handle, so this model is no more or less fragile than the others.\u003c\/p\u003e\n\u003cp\u003eThe key advantages to using a Chemex are still true: you control the coffee-water mixture and can ensure it's the right temperature (between 195-205°F) from the beginning of the infusion; you control infusion time based upon the fineness of your grind and pouring technique; and lastly (and I think, of great significance) you can keep this system very clean.\u003c\/p\u003e\n\u003cp\u003eA disadvantage of paper filters generally is that they can impart a noticeable flavor to the brew, which is especially true of the thick Chemex filters, so pre-wetting the filter is key to excellent brewing. Also, Chemex brewing is best when making larger amounts of coffee: paper taste and heat loss are more noticeable when trying to brew a small batch of say 12 oz.\u003c\/p\u003e\n\u003cp\u003eYou will need to buy Chemex filters to get the best results. The fact that the V60 does very little \"work\" means that it's almost infinitely adjustable, which is why so many people enjoy using it.
