This Carmo SWP lot really tastes like a non-decaf Brazil - molasses sweetness, bittersweet chocolate, and roasted nut. It's a bodied cup, making for a great dual use coffee. Versatile in the roaster, a good daily decaf. City+ to Full City+. Good for espresso.
We just received back another of our Carmo de Minas lots from being processed by Swiss Water decaf. Send off a good coffee for decaffeination, and get a good coffee back in return. That's been our experience at least, and this latest Carmo de Minas lot is no exception. Made up of a single dry-processed coffee from Fazenda Santa Ines, this resulting decaf holds much of the sweetness, body, and cleanliness we value from Carmo coffees in the first place. All of our custom decafs are processed at the Swiss Water plant in Vancouver, where caffeine is extracted using a water soaking technique, without any chemicals whatsoever. The resulting coffees cup with much of their original characteristics, and a relative clarity in the profile.
The dry grounds have a nutty sweetness, in a sort of peanut sauce way. It's a Brazil, and so we expect as much, but it actually builds strong sweetness at City+ and FC, and with some fruit and cocoa notes as well. The wet grounds are saturated with a smell of black strap molasses and a touch of canned fruit and roasted nut on the break. This makes a big-bodied cup, and one that will fair well for both brewed coffee as well as for a decaf espresso. The cup is highlighted by dominant features bittersweet chocolate bar and candy-coated nuts. Sweetness is convincing, and though I wouldn't call the finish "clear" I think it's in line with our non-decaf Brazils (actually a tad cleaner from the decaffeination process). An overall nice daily drinking decaf, with flavors that hold up against the non-decaf counterpart.
