At the foot of the Serra da Mantiqueira, Fazenda Kaquend has a 200-year-old tradition of coffee production. The farm is owned by Jos© Wagner Ribeiro Junqueira and his wife Margarida, and their sons Kleber, Ralph and Herbert. Kaquend has won too many awards to list, including the #1 spot in the Cup of Excellence. This lot is a pulp-natural process (cereja decascada) from this 45 acre farm with an altitude of 1100 to 1450 meters. They have Yellow Bourbon, Acai, Yellow Catua_, and Catuca_ varietals planted. This small lot is all Yellow Bourbon.
The lighter roast dry fragrance has strong hazelnut aspect and an interesting grain note like wheat thin crackers. Add water and the wet aromatics become very sweet and malty-honey syrup, with floral notes (wildflowers) initially, and hints of sage. There is something pleasantly savory about the aromatics. The cup is delicate. In the light roast the cup has very mandarin-orange-like flavor, tea-biscuit and barley, with a very mild overall intensity of flavor. As it cools, sweet lemon accent notes emerge, more as a flavor than an aspect of acidity (it's a mild and proportionate acidity overall). There is also a sweet green tea flavor as the cup cools. Darker roasts take on more bittersweet and chocolate character with some anise and herbal hints, but the lighter roasts are what distinguish the quality of this coffee.
