In eastern hararghe, the coffee is milled out of the dried skin by pounding it in a big wood mortar. The farmers want to keep the skin for their own use; to sell or use to make qishr, the tea beverage. But a lot of bits and pieces are still in the coffee despite the fact that they winnow it.
